A total newbie here. I’m trying to improve my pizza making skills. I’m trying to make Napolitano pizza style (60% hydration) and while I’ve gotten better at the whole process, I’m still struggling with making the dough have a smooth surface. I think my main problem is that I don’t have any technique when kneading, I’m just pushing the dough against the table. Any tips on how to improve the technique? Or do you have any source (videos or any kind) on how to knead properly?
