I bought a whole last year. Roughly $7.00 per lb for all the meat we got. This seems cheap without adding up all the ounces.

Beef looks to be about average grocery price, so buying the lot isn’t giving you a special deal or anything and you’d be just as well off buying whichever cuts you wanted individually.

With the current cost of cattle the prices look pretty fair. 1/2 steer price can range from 1300-2k, ive been trying to price out what to sell a half for this year and its all over the place
It seems a little light for a 1/2 steer, if I did math right you’re looking at 175ish lbs, most 1/2 are more around 200-250. Still looks to be around $7 pound which isn’t bad if you arent having to pay processing fees on top of the hanging weight

You’ll really want to compare to other farms/butchers in your area that offer quarter/half cows and pigs and see if they’re really better.

These are actually super cheap! I just bought a 1/2 cow from a local farmer for $3 per lb hanging weight. $60 kill fee, $.90 per lb processing and freezing. Total was $1377.00. The difference is I know the farmer and how the cow was raised.

Calling ground beef sirloin is a bit disingenuous.
Personally i’d like to see more cuts. Flank, skirt, chuck, shank, ribs etc and bones for stock.

I got a quarter cow grass finished, packaged and frozen in 2017 for under that price, maybe 450-500, and half hog for around $160-180. This seems very reasonable if it also grass finished, packaged and frozen. The butcher did whatever I asked them though. I could have told them to make the entire cow ground beef, beef jerky, etc. processing costs would vary especially if I got jerky. Same with the pig, could have got it all made into sausage I wanted, or different cuts of roast, chops and steaks and some sausage.
