When the bubbles are so pronounced and the focaccia so high, I honestly don’t associate it with a good result. But from what I’ve seen on this subreddit, Americans in particular compete to see who can make the tallest and most bubbly “focaccia”.
My advice is to add some cherry tomatoes (or other toppings) to keep it flat on the top if you want it tall (like you would with a Focaccia Barese) (it should not be round like a bread… I know in US pizza and focaccia are thought of as bread, but for us Italians they are leavened products different from bread). There is also the option of making it white but generally in that case you try to make it thin (the most famous focaccia in Italy is the Genovese one which is thin).
What you made is more of an overfermented bread than a focaccia… if you like it like that, there’s nothing wrong with it, I don’t mean to say that this is a “wrong” result, it’s probably exactly how you wanted it (it just feel “wrong” to me, but I did not make it). I just thought I’d suggest some alternatives to get you curious, rightly everyone has their own tastes.
