To be clear, the rareness isn’t really what my issue was. I’ve never seen banding like that before from what was supposed to be a very good steakhouse, and the grey outside part was probably the most dry and stringy meat I’ve tasted (I had to try a bite). And even then, it wouldn’t have been an issue if the guy hadn’t tried to tell me I don’t know how a proper steak is cooked and had admitted it was wrong, if not embarrassing. I felt like medium rare/rare but if that was a properly cooked rare or blue steak I would have happily ate it without issue. I’m not picky and will often order any of those temps depending on the cut.
EDIT: Look at the left side of the steak. It was so terribly cooked, the “crust” actually separated from the interior meat. It was literally like the turkey from National Lampoons Christmas but in reverse.

I’ll eat a steak from blue to medium. I’ve been called a vampire for how raw I’ll happily eat a piece of meat.

The hindsight part of me might’ve commented, “And you don’t know how to run a restaurant,” but that wouldn’t have hit me until I was taking a shower after stress-eating the biggest Beef-n-Cheddar I could order at Arbys.

I don’t order steak in restaurants anymore, as i cook better than they can but i would send that back and order something else, if a manager ever said that to me i would say, “take this back and take it off my bill.. I will have the water while my company finishes their meal. I will never return”
