NY Strip. Heated the grill to 600. Switched to manual model 7. Cooked until 130° with lid open.

While it’s not what I can get with a good pan or a flat top, it’s as good or better than a propane grill.

    Use the right side of the grill closest to the hopper. Gets the hottest and unless you are open top grilling you can leave it set to 600 and it’ll hold it very well. Looks good!

    The secret to searing on a propane grill is to do it on the warming rack at max temp and flip often, so the flares are just kissing it instead of engulfing it. Let it keep flaring from the drips, as long as it isn’t engulfing the meat. Will do a solid sear plus the smoke from the dripping gives some (always lacking on gas) flavor to it. Similar to how you sear on a Santa Maria. I call it the Upper Decker. I also usually throw a bunch of steaks on the smoker for 30-45 min then pull them and vacuum seal and freeze for later. Ads more flavor to the gas grilled ones.
