    Crème Brûlée Filling

    * 3/4 cup milk
    * 3/4 cup cream
    * 1/4 cup sugar
    * 4 egg yolks
    * 3 tbsp cornstarch
    * 1 tsp vanilla

    1. Mix cornstarch with a splash of cold milk, whisk in yolks.
    2. Boil milk, cream, sugar, and vanilla until edges bubble.
    3. Temper yolks with hot liquid, whisking.
    4. Return to pan, stir until thick and slow “plop” forms.
    5. Chill with plastic on surface, at least 1 hour.

    Donut Dough

    * 3/4 cup warm milk
    * 1/3 cup sugar
    * 2 1/4 tsp yeast
    * 1 tsp vanilla
    * 1 egg
    * 1/4 cup melted butter
    * 2 1/2 cups flour
    * 1/2 tsp salt

    1. In a mixer bowl, combine warm milk, yeast, vanilla, melted butter, egg, sugar, and salt.
    2. Add flour, knead 7 min until soft. Add more flour if sticky.
    3. Shape into ball, place in oiled bowl, cover. Rise 1 hr.
    4. Punch down, roll to 1/2 inch, cut 3-inch rounds.
    5. Proof 30 min on parchment under plastic.
    6. Fry at 350°F for 90 sec/side or bake at 375°F for 8–11 min.

    Filling Donuts

    1. Use knife to tunnel center.
    2. Pipe in chilled custard until comfortably full.

    Crunchy Caramel Topping

    * 1 cup sugar
    * 1/4 cup water
    * 1 tsp corn syrup

    1. Moisten sugar with water, add syrup.
    2. Heat on medium, swirl gently to light amber.
    3. Dip pan in cold water to stop cooking.
    4. Dunk tops in caramel. Set on parchment.
