Crispy Atayef – A Sweet Middle Eastern Classic

Atayef are soft mini pancakes filled with sweet cheese, cream, or nuts. Mix 1 cup flour, ½ cup semolina, 1½ tsp yeast, 1 tbsp sugar, pinch of salt, 1½ cups warm water. Rest 30–45 min. Add ½ tsp baking powder. Cook one side only. Fill, fold, fry, and dip in syrup or serve fresh with pistachios. Light, crispy, and delicious.
