– 3 med Tomatillo – 30 Arbol (about 1oz) – 2 cloves garlic – salt to taste (1/2tsp+) – 1/4 cup water – 1/4 cup vinegar
Roasted peppers first, then transferred to a small pan with water already lightly boiling. Reduce to simmer for 5 min while roasting Tomatillo and garlic.
Transfer Tomatillo and garlic to a bowl. Cover pan, turn off and soak 15min.
Immediately remove from water and transfer peppers, Tomatillo, garlic to blender or Vitamix. Add salt, pepper water, vinegar and blend to desired consistency.
Taste and add more water, vinegar, salt as needed.
