Creamy Roasted Tomato Soup
A cozy hug in a bowl—with a kick of garlic and a side of cheese toast.

Ingredients:

2 cups cherry tomatoes

1 red bell pepper, chopped

8–10 garlic cloves (go wild)

5 shallots, peeled and halved

1 tsp dried rosemary (or a fresh sprig if you’ve got one)

Salt & black pepper to taste

3 sun-dried tomatoes

A handful of fresh parsley

1/2 cup heavy cream

1 cup vegetable or chicken stock (more if you want it thinner)

Olive oil (for roasting)

To Serve:

Cheese toast (crispy edges, gooey middle—yes please)

How to Make It:

Preheat your oven to 200°C (400°F).

Toss cherry tomatoes, bell pepper, garlic, and shallots with olive oil, rosemary, salt, and pepper. Spread them out on a baking tray.

Roast for 25–30 minutes, until everything is soft and slightly caramelized.

Add the roasted goodness to a blender with sun-dried tomatoes, parsley, cream, and stock.

Blend until smooth and creamy. Add more stock if you like a looser consistency.

Taste and tweak the seasoning if needed.

Pour into bowls, swirl in a little extra cream if you’re feeling fancy, and serve with hot, melty cheese toast.

Dip. Sip. Sigh. Repeat.
