Hi guys & happy Saturday!

Tonight I had the apartment to myself and felt like cooking all the food sitting in the fridge for some meal preps. If anyone remembers my last post, I made copycat Fresh Kitchen bowls and they were so good that I made the same ones AGAIN less than 2 weeks later!

I love to share my ingredients + methods of cooking so everything is listed below:

Fresh Kitchen Copycat Bowls

Quinoa

  • 1 cup quinoa

  • 2 cups water

  • Seasonings: Salt

I simply throw everything into my rice cooker and within 30 minutes it’s done!

Citrus Chicken

  • 1 lb chicken

  • Marinade/Seasonings: Olive oil, lemon juice, lime juice, salt, pepper, garlic powder, onion powder, italian seasoning, and a random “garlic butter” seasoning I had from Aldi

I marinated in the olive oil, lemon juice, and garlic butter seasoning. I needed the protein of these preps to be hands-off since everything else was so hand on so I put these on a baking sheet, seasoned, and threw in the oven at 400°f for about 20 minutes

Crispy Roasted Sweet Potatoes

  • 4 sweet potatoes, washed/scrubbed + diced

  • Seasonings: Salt, pepper, garlic powder, onion powder, paprika

Wash, dice, coat in olive oil + seasonings. I air fried these at 400°f for about 12 minutes, shaking every time I remembered (about every 3-4 minutes)

Roasted Broccoli

  • 2 crowns of broccoli, washed + cut

  • Seasonings: Salt, pepper, garlic powder

Wash, cut, coat in olive oil and squeeze some lemon juice over top. Then coat in seasonings and air fry at 375°f for about 12 minutes, shake as often as possible (every 3-4 minutes)

Not Pictured: Coconut Sriracha Sauce

  • 1/2 can coconut cream

  • Sriracha (to taste, maybe 1/2tbsp-1tbsp)

  • Honey (if you like it sweeter)

  • Optional: lemon juice + garlic powder

Just stir this all together and you have a delicious sauce to dip or drizzle onto your meal!

Fiancé’s Meals

Citrus Chicken

  • 1 lb chicken

  • Marinade/Seasonings: Olive oil, lemon juice, lime juice, salt, pepper, garlic powder, onion powder, italian seasoning, and a random “garlic butter” seasoning I had from Aldi

Same chicken used in FK bowls, refer to instructions above

Garlic Butter Green Beans

  • Green beans, washed + snipped

  • Seasonings: Salt, garlic powder

I heated a pan over medium heat, poured in about 1/4 cup water, tossed in the green beans with the salt and garlic powder, covered with tin foil (or a lid of course) to steam and just stirred them around every few minutes until they were done. Uncovered to let water evaporate and added about 1 tbsp butter

Crispy Roasted Baby Potatoes

  • Baby potatoes, washed + cut

  • Seasonings: Salt, pepper, garlic powder, italian seasoning, parmesan cheese

Wash, cut into small pieces, coat in olive oil and seasonings. Air fry at 400°f for 15 minutes, shaking as often as possible (about every 3-4 minutes) for even crispness.

Lengthy post but I hope many people are able to recreate anything that looks delicious to them! I absolutely love to cook with my heart so everything here is just what i’ve come up with over the years. This took me about 2 hours (taking my time) and most of the time was because I air fried everything and had to wait for each thing to be done to start the next thing. You can totally roast in the oven but I tend to burn things when it’s not right in front of me, so the air fryer won tonight. If anyone has any comments or questions, I’m always happy to reply!
