When I stack loaded my Presto canner, I could fit 7 jars on a level. I had a jar tip and break and learned my lesson. If I don't have the exact number to evenly divide, I stack the lesser amount on the bottom and used the divider to stabilize those and the larger number of jars on top. You're not doing it wrong, I just wanted to pass on the tip.
Yum! I love Zuppa Toscana. I think it’s great to have a home canned version of this on the pantry shelf. The smaller personal sized meals have really come in handy when I am too busy to cook. I usually switch the potatoes out for cauliflower to make it lower carb. Do you think the soup would can well with cauliflower instead? I’ve only ever seen pickled cauliflower recipes.

I make Zuppa Toscano but I freeze it. I’m a family of one and 4 or 5 pints in my freezer is plenty along with a variety of other soups. I’ve never been concerned with the clarity of the broth for just me but I can see why that would make it more attractive. I do wait until I’m ready to eat the soup before garnishing with crispy bacon. 😊

Ohh I LOVE this idea!! We eat zuppa toscana often and I am a soup lover so having a single size ready would be awesome. I have been afraid to try pressure canning anything except chicken broth so far so this might be my next attempt 🙂

Code isn’t working for forjars
Hi Abbey. I just did 14 pints of this soup, infact I do this soup quite often as we both think so far this is our favorite and have it for a nice lunch. I have always used hot italian sausage and have had no problems canning also we add a little extra hot peppers. I also put fresh kale in but at the bottom of my jars so the weight of the spuds and meat keep it from floating to the top. I freeze whip cream in my ice cube trays then bag it all. So when I want zuppa I add 2 cubes for each pint when heating it up. I love the 4jars lids they are a little pricey but when you are spending a lot of money on your ingredients to can especially meat it is well worth it. I did have a few bent lids in my last order and reached out to a rep in Kelowna. Within a week I have 12 replacement lids in my mail box. Great service from them. Cheers Abbey, thank you

I did a similar recipe with Italian sausage and carrots, white beans, kale, onion, potatoes, broth, seasoning. One of my favorite soups. So flavorful and hearty.
Abbey, could this be frozen instead of canned?
Sage is a spice they generally discourage you use in canning as it can become bitter. I don’t typically use sage so I can’t attest if this is true. Does anyone have any experience with it and know if it gets bitter? Also I like how you can it fuller and just add time to the canning. That way when you go to eat it you leave room for the milk or creme you’d typically use in this soup without diluting the seasoning too much.
