This Zatar mix is the most authentic. I’ve done my research so you won’t have to. Give it a try it’s so so good and easy.
Ingredients:
7 oz. Dry Greek oregano
1/4 cup toasted caraway seeds
1/4 cup cumin seeds
1/4 cup coriander seeds
2 tbsp dill seeds
5 tbsp sumac
4-5 tbsp extra virgin olive oil
1 tbsp salt
1 pound/ 16 oz. Toasted un hulled sesame seeds
Preparation:
Start by toasting the “toasted sesame seeds” just for 2 minutes to wake up the flavors. Set them aside to cool completely
Toasted all the other spices except the sumac on medium heat for 2 minutes mixing all the time. Set aside to cool completely then process finely in the food processor, set aside. Now you can process the oregano until very fine. When you finish the whole amount, place in a big bowl and start adding the olive oil gradually, I added 4 1/2 tbsp in total. Mix in and rub very well with your hands. Add the whole amount of sesame seeds. Mix very well. Season with salt and add 4-5 tbsp of the spices, add 5 tbsp of the sumac. Mix very well, taste and adjust the flavors to your liking.

you just can’t beat some homemade zat it’s the most fragrant thing and it brings back so many memories it’s a great flavor enhancer to so many dishes and it makes a great flat bread this is Mona from dainty bite let me show you how to make it step by step and let’s get started here I have 16 oz of sesame seeds these are toasted unhal seeds and I’m going to give them another toast simply 2 minutes keep on mixing you don’t want them to burn but the flavor will be much more enhanced set them aside to cool completely and now I’m going to work on the spices you’ll need specific spices and I’m going to toast them as well and here I have coriander car seeds cumin seeds and Dill seeds all the amounts and all the ingredients are in the description box below so check it out I’ll be toasting the spices as well keep on mixing you don’t want them to burn it’s going to take only 2 minutes as well it’s going to go so fast I let them cool a little bit and then I’m going to process finally don’t forget I always love to hear from you don’t forget to subscribe like share hit the notification Bell so that you won’t miss any of my recipes and follow me on social media the links are in my profile and in the description box I wish you can smell this spice mix it’s so good now let’s talk oregano you can use oregano that looks like this wash dry and then process finally but I don’t have large quantities that’s why I’m using dry oregano that looks like this I’m using a Greek oregano it’s best if you use a Mediterranean oregano but if you can’t find it any other variety will work as well we want it to be much finer so I’m going to use the food processor or my handy most favorite processor I’m going to do it in batches and finish the whole amount and this is what you’re looking for you want a very fine powdery mixture that looks like this another way you wake up the flavor is by adding some olive oil I’m using the best extra virgin olive oil I can find I’m adding four tablespoons I’m going to mix it with the Sandy texture of the zat mix it very well one tablespoon at a time and every time use your hands and mix it in with Z very very well four to 5 tablespoons later I’m happy with how this looks now I’m going to season my zat I’m going to add 1 tablespoon of salt mix it in and zat is one of those spices you need to taste maybe you like it a little more salty it’s totally up to you this is quite enough for me now the sesame seeds are cool to the touch I’m going to add half of the amount mix well and add the other half because I love my zat loaded with sesame seeds it will be the best I promise it’s looking great and smelling even better now I add the spices two tablespoons at a time I want to mix taste and make sure I don’t overdo it with the spices and you don’t want to miss adding sumac it’ll add some tanginess and some nice flavor you can’t really replace it with any other flavor more spice mix more sumac until I’m very happy with the flavor if it’s your first time making Z I’m leaving all the amounts and all the ingredients in the description box below so check it out and make it exactly like I’m showing you the whole house was smelling amazing and I’m using this Z every single day I save it in an airtight container you can save it in the fridge if you don’t use it too often you really can get this in any store or in any jar you have to make it to appreciate the flavors the smell and the taste of this heavenly zat you can make amazing flat breads top your eggs your Lebon your cheese make savory crackers scones you name it the choices are endless it’s a staple in my kitchen give this recipe a try I’m sure you’re going to love it and until next time Bon a
