1.)Start by getting your beet and garlic softened in the oven. Cut the tops off and place into a foil sheet. Drizzle with olive or avocado oil and add salt and pepper. Place into a 350 degrees Fahrenheit oven for about 25 minutes or until softened. This depends on the size of the beet.
2.)Then, create your sauce. Add your beet and garlic to a blender with a 1/4 of broth.
3.) Then, over medium heat, add your oil and your diced onion. Then, add your spices and risotto. After, add your broth, sauce and wine. Let it cook through.
4.)Add mozzarella cheese and then garnish with walnuts, crumbled feta, and parsley. Enjoy and follow @chef_zabelles_kitchen
