I’ve got the bird in the brine bag and am curious for timing. I cooked one at Thanksgiving and it was delicious, but was done really early compared to instructions. If I’m cooking on the Traeger at 325, how long do yall think a 12lb spatchcock turkey would take to cook? Family coming in and I don’t want cold bird or late bird. Thank you!

    Because it’s spatchcocked it’s going to cook a lot faster. I’d say 12lbs will be done in 4-5 hours. I did a 26 lb in 6.5 hours and was amazing. Ironwood xl

    Edit: if you’re done early wrap it in a towel and get it in a cooler and rest. It will stay moist and amazing for hours in there. You can have it done early and rest and in time for family. You can’t speed the cook up if it takes longer so I’d get it on early.
