Smoked my first shortribs the other day and it was absolutely incredible! It was everything I wanted from a brisket, but better – tender, smokey and fatty. Also, the process was as easy as a brisket.
So my question is, why should one cook a brisket instead of some shortribs?

    They taste different. They’re both expensive but it would be more expensive to feed a gathering with short ribs. Don’t get me wrong- I think plate ribs are likely the best bite in bbq, but brisket has its place.

    They taste different and for where I live plate ribs are 3-4x the cost of brisket before subtracting bone weight.

    I’ll cook plate ribs a couple times a year and brisket way more often.

  3. I prefer short ribs over brisket because of size and flavor. Not hating on brisket, just don’t need 10+ lbs of meat vs 2-3.

    I dry brine and go heavy heavy black pepper – it’s almost fruity. Then some garlic, onion. Celery seed adds its own thing.

    I love my friends but I am not paying for 10ish people to all have their own dino rib. So brisket would win there.

    I mean, you answered it – brisket is less fatty (you can choose that anyhow). It feeds more people at cost and is just kind of a better show of smoking “skill.”

    I like smoking chuck roast, then plate ribs, then brisket.

    Pound for pound, ribs are more expensive than brisket. If you want to cook ribs once a month, then go for it. I dont make enough money to make this every week.

    Plate / Short ribs at Costco is twice the price per LB vs brisket and w ribs you are paying for all the bone.

    If prices were the same I’d never smoke brisket and only do dino short ribs. Given the price difference I smoke brisket more and short ribs once a while.

    I currently have my first rack of short ribs on the smoker. brisket is half the cost and there’s no bone weight. Definitely a hell of a lot cheaper. Beef ribs seem a little more fool proof so far during my cook. I seasoned the night before and woke up and threw them on the smoker at 6 and then went back to bed. They’re 185° ish right now and I haven’t wrapped after 7 hours.

    I feed a large group every weekend and slides brisket Sunday dinner with brisket tacos for Monday dinner is a routine.

    I prefer beef ribs over brisket, with that said I’m about to go trim a brisket for pastrami, ground beef and tallow.

    Short ribs are too rich and more expensive than brisket. Honestly besides being a little more rich tasting than the brisket, they taste almost the same to me. So im in the “Why bother smoking short ribs?” camp.

    In my experience, beef ribs are far easier than brisket in just about every way.

    I can’t tell if you’re being facetious… It’s all about taste and circumstance. Short ribs might have been better for your situation and taste preferences at the time. Downsides of short ribs are that they are not affordable to feed a crowd with, and takes up more room on the smoker (in terms of weight of usable product per square inch), as there tends to be a lot of waste with bone-in short ribs.

    Brisket is too rich for me anymore since I quit drinking. I tried the whole top blade steak/ roast smoked from a Yoder video and it’s probably my favorite cut of beef to smoke now.

    You are paying like 2x-3x-4x for the meat is why “why bother smoking brisket”.

    Yes they are really good but that is the reason. It comes down to price. Same reason people are not having Ribeye/Filet for every meal.
