This is one of my go to recipes for meal prep or just a cozy fav (especially when I’m feeling like I need more veggies!). I LOVE Minestrone Soup. It’s comforting, so healthy, and simple to make!
Ingredients shown in video:
– few tbsp olive oil
– 1 small bag baby carrots
– 4-5 stalks celery
– 2 zucchini
– 1 small sweet onion
– 4-6 cloves fresh minced garlic
– about 1/2 can tomato paste
– Italian seasoning (~1 tbsp)
– garlic powder (~1 tbsp)
– oregano (~1/2 tbsp)
– thyme (~ 1/2 tbsp)
– 2 cartons vegetable stock
– 1.5 cups small pasta (+ save a little pasta water)
– 1 can light beans rinsed (pinto, great northern, garbanzo etc- doesn’t really matter just use what you have/ get your fav)
– 1 can dark beans rinsed (kidney, black, mixed etc- again your choice!)
