CR salmon is the greatest marketing for fish since the fish they use for imitation crab. Looks great though!

You shouldn’t cook fresh salmon under 120, unless you freeze it hard for a couple days. Copper river salmon will have nematode larvae. The first fishing opportunity on the copper river flats this year was 3 days ago. So if that is this year’s salmon, it could have a lot of parasites.
