3 hours smoked, 2 hours wrapped in Oklahoma Joe's peach butcher paper (meat side down, 3 slices of butter and homemade BBQ sauce) 1 hour unwrapped, sauced last 30 minutes.
Homemade Maple Peach bourbon BBQ sauce, 2 cups of organic ketchup,
1 1/4 cup of dark brown sugar,
1 cup of Jim bean peach bourbon,
1 cup of apple cider or organic apple juice
1 cup of apple cider vinegar,
1 3/4 cups of maple syrup,
2 cups of orange blossom honey,
3 tablespoons Worcestershire sauce,
3 tablespoons of Soy sauce,
2 teaspoons of dry mustard,
2 tablespoons of Dijon mustard,
3 tablespoons of chili powder,
2 tablespoons of smoked paprika,
3 tablespoons of roasted garlic powder,
3 tablespoons of onion powder,
5 dashes of liquid smoke,
1 tablespoon of cornstarch.
Mix all in a pot and simmer for 40 minutes stirring occasionally.
