Pancetta, parmigiano reggiano, white wine, peas, black pepper, cream, and beautiful eggs from neighbour's chickens. So it's not carbonara, but it shares some of the DNA. Needed some comfort food tonight and this really hits the spot.

    The only thing it shares with carbonara is that both dishes are based on pasta… The important thing is that you liked it

    It’s not carbonara adjacent, it’s only pasta with eggs and various ingredients that you wanted to put in but has nothing to do with a carbonara, carbonara is a precise recipe, and if you don’t do it you are doing something else.
