Peruvian husband-and-wife chefs Juan Manuel Umbert and Janice Buraschi brought their Lima success story to Miami with their second restaurant, aptly named Pasta. The open kitchen puts their love of Italian and Peruvian flavors on full display, pairing top-notch ingredients with bold combinations. Starters include razor clams with ’nduja and salsa verde, as well as oyster tempura with aji amarillo and bottarga. Pasta dishes like taglierini with anchovies, peperoncino, garlic, and pangrattato; fettuccine verdi, caramelized leeks, lemon, and Parmigiano Reggiano; and pappardelle with 15-hour braised beef cheek ragu showcase the duo’s talent. With choices like panna cotta al caffè and homemade lucuma gelato, dessert is a no-brainer.
