SAM CARTER DISCOVERED A FRENCH STYLE BISTRO WHERE THE ATMOSPHERE IS NEARLY AS IMPORTANT AS THE FOOD. THE FRENCH HAVE A SAYING, TOO MA COUPE, LE SOUFFLE, ROUGHLY TRANSLATED, IT MEANS TO TAKE MY BREATH AWAY. AND THAT’S EXACTLY WHAT THEY’RE TRYING TO DO HERE AT M PEPPER. WHEN YOU WALK IN TO THE TYLER PARK FRENCH BISTRO AND PEPPERS, YOU WOULDN’T BE THE FIRST TO FEEL LIKE YOU’VE BEEN TRANSPORTED TO THE SEVENTH ARRONDISSEMENT IN PARIS. ADJOINING THE BELLWETHER HOTEL, EXECUTIVE CHEF ANDREW MCCABE SAYS THE GENESIS OF THE IDEA CAME FROM THE HISTORIC BUILDING ITSELF. WE FOUND THIS BEAUTIFUL SPACE AND WE JUST WE HAD A FEW THINGS IN MIND, A FEW DIFFERENT CONCEPTS. BUT WHEN WE WALKED IN HERE, THIS ONE JUST KIND OF CHECKED ALL THE BOXES FOR JUST A FRENCH BISTRO. FROM THE CHECKERBOARD FLOORING TO THE SCONCES FIXED TO THE BAR AND PEPPERS, ASSISTANT GM AND SOMMELIER BRITTANY HOFFMAN THINKS THERE IS AN INTENTIONALITY TO EVERYTHING THEY DO. WE ARE FOCUSED ON CLASSIC COCKTAILS, CLASSIC FRENCH WINES, A LITTLE KISS OF CALIFORNIA AS WELL, AND CLASSIC FRENCH CUISINE. OH, I ALMOST FORGOT THE MOST IMPORTANT PART THE FOOD. M. Peppers brings French bistro charm to the Highlands

Recently opened in the Highlands, M. Pepper’s is a unique French bistro-style restaurant from the same team that opened the popular NuLu restaurant Bar Vetti.Located inside the historic Bellwether Hotel, the restaurant is led by executive chef Andrew McCabe. According to him, to a certain degree, the building dictated the concept.”We found this really beautiful space, and we just walked into it, and we had a few things in mind, a few different concepts, but when we walked in here, this one just checked all the boxes for a neighborhood French bistro,” McCabe said.According to staff, including assistant general manager and sommelier Brittany Hoffman, every detail of the restaurant’s design, from the flooring to the pictures on the walls, is intentional.”We are focused on classic cocktails, classic French wines, a little kiss of California as well, and classic French cuisine,” Hoffman said.As for the food, McCabe claimed to have designed his menu to be classic but with a few surprises.”It’s rooted in French cooking and all that,” McCabe said. “But it’s definitely a fun little take on something.”M. Pepper’s is open Tuesday through Saturday and offers both outdoor and private dining options.
