Wild boar and N’duja ragu

    Recipe:
    Fry boar sausage meat until browned, then add onion and salt, deglazing what you can with the onion juice so that new caramelisation can form on pan.

    Once Onion is softened add chopped garlic and nduja. Once nduja is melted deglaze pan with a cup of white wine and reduce.

    Once Wine has reduced to almost nothing add chicken Stock and reduce it down to a fairly concentrated consistency.

    In the meantime as the stock is reducing fry breadcrumbs in butter till golden brown, and in a separate pan fry chopped tenderstem broccoli until a little charred then add a little water to the pan to soften them a little.

    Once the ragu is reduced down add some cream a little lemon juice, and some Grated parmesan/pecorino, stirring to combine. Then add almost al dente pasta, finishing it in the sauce.

    Once pasta is cooked al dente add your broccoli into the sauce and then plate up and top with breadcrumbs and parmesan.

    a wild guess , but did you hunt the boar yourself?

    The broccoli is a 10 from me. Wouldn’t last 90 seconds with me I don’t think.
