Ingredients:
* 1 cup Baldo rice
* 1.5 cups boiling chicken broth (or you can use chicken bouillon)
* 1 tablespoon butter
* 3 tablespoons vegetable oil or olive oil
* 1 teaspoon salt (adjust after adding the liquid)

Preparation:
Soak the rice in cold water for 30 minutes. Drain the rice, then fill the bowl with water again and gently stir the rice. Drain and repeat this rinsing process 4-5 times to remove excess starch. Properly rinsed rice prevents the pilaf from becoming mushy. After rinsing, drain the rice thoroughly using a sieve.

In a pot, add the butter and vegetable oil, then add the orzo and sauté until golden brown. Once the orzo is toasted, add the drained rice to the pot and gently sauté it over low heat. Be careful not to break the grains while stirring. The better you toast the rice, the fluffier the pilaf will be.

Next, pour in the boiling chicken broth or the mixture of bouillon and hot water (1.5 cups). Add salt, keeping in mind the saltiness if you use bouillon. Give it one gentle stir, then cover the pot with a lid.

Cook the pilaf on the lowest heat without stirring until all the liquid is absorbed. Once the water is gone, turn off the heat and let the pilaf rest for 10-15 minutes with the lid on.

After resting, gently fluff the rice from the bottom up without breaking the grains, then serve.
