It’s the perfect appetizer for any occasion, combining classic Mediterranean flavors with a hint of Turkish flair.
Ingredients:
Eggplant (patlıcan)
Red and green peppers
Sun-dried tomatoes
Parsley
Olives
Olive oil (a little)
Parmesan cheese
Balsamic vinegar
Salt
Garlic
Black pepper
Capers
Halloumi cheese (optional, for topping)
Instructions:
Preheat your oven to 200°C (390°F).
Pierce the eggplants with a fork to prevent bursting and roast them in the oven until soft and tender (about 30-40 minutes).
Roast the red and green peppers alongside or separately until the skin blisters, then peel and slice them.
Chop the sun-dried tomatoes, olives, parsley, and capers.
In a large bowl, combine the roasted eggplant (peeled and mashed), roasted peppers, sun-dried tomatoes, olives, parsley, and capers.
Add a splash of olive oil, balsamic vinegar, minced garlic, salt, and black pepper to taste. Mix well.
Top with grated Parmesan and, if you like, grilled halloumi cheese.
Serve as a delicious appetizer or side dish with bread or crackers.

Okay, I made this roasted veggie mezzi and it turned out so good. I had to share. No heavy oil, just a light touch of olive oil. Oh, and I poked eggplants with a fork before roasting so they don’t explode. Cy, I roasted the plants, red and green peppers, garlic, some drying tomatoes, all those Mediterranean flavors. [Music] Then I mix everything with olives, capers, fresh parsley, balsamic vinegar, black pepper, and yes, I added some parmesan on top because why not? [Music] [Music] I also gr some halumi and let me tell you that salty multivite with the wedges unreal. It’s like a meditarian antipesto but with a Turkish twist. You can totally serve this warm or cold. And guess what? I made seafood pasta yesterday and this music it went perfectly with it. Save this for later.
