I have fallen off the wagon in recent years due to too many life changes, but I used to be really fit which makes getting back in a shape where I feel good again and have energy, so much harder.
I remember at my best shape I used to eat so much and I would be shamed by everyone esp in the office like – are you going to eat all that? And I’d be shocked they are satiated with a shitty store bought sandwich (meal deal in the UK if you know the kind of sandwich where the white or malt bread gets stuck to your teeth).
I didn’t know that what I did was a thing and I was in the best shape and energy levels of my life! You all inspired me to get back into it!
Here’s my chicken soup with no oil. I boil a whole chicken then take it out to remove everything but the actual meat (so bones and skin/fat), and in the remaining broth I boil chopped carrots, potatoes and parsnip. At the end I add the boiled lean chicken, fresh parsley, salt and pepper ❤️
