I even made it to the gym this week! I’ve included photos of all the ingredients that go into each meal, but not pictured are avocado oil and butter for sautéing. As I was eating through last week’s meals, I realized I had made a mistake by adding yogurt or brownies to each box. I didn’t always want a sweet right after my meals, but I did miss snacks throughout the day or a sweet when I really did want it, so this week I also made snack boxes. I plan on storing my shrimp and tofu meals in the freezer to make everything last a bit longer, and I think they’ll reheat fine.

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    Do the harvest snaps get soggy in the snack box with the other stuff? I packed veggies and hummus together with wheat thins once and I was so disappointed when it came time to eat them, they lost all their crunch 😭

    Congrats on getting to the gym and turning the corner on your mental health (hopeful). I’ve away from the gym for a few weeks recovering from pneumonia and had NO IDEA how important it was to my mental health! 😊

    Please ignore if you know this, but tofu changes texture when it is frozen. Some people love it. (I think it tastes like wet sponge and I LOVE unfrozen tofu.)
