I picked up this cookbook (1964) from a thrift shop today! If anyone is interested in recipes from it, let me know what you are looking for and I will post a pic.

That’s a rare and lucky find! She also has a couple books on Scandinavian and Finnish baking. I have those, and they’re excellent. This one I think is actually out of print.

Beatrice is of Finnish descent and lives in Northern MN. She takes Finnish recipes and alters them to use food generally available in her area. She’s written a bunch of cookbooks and they’re pretty solid.

Id be interested in seeing some recipes from this cookbook if you find any good ones. My family used to go to her restaurant back in the early 1980’s although I was too young to remember the food there.
She apparently also invented the pizza roll.
