Smoked for an hour at 275 using charcoal and hickory chunks in my masterbuilt gravity smoker to get some color and flavor. Cranked up to 600 and seared after to crisp up the outer bacon and put a crust on the beef.

They look great! Did you happen to take an internal temp after it was smoked and seared? I am curious about the texture of the bacon after cooking. I personally love chewy bacon but the fam does not.
