Crispy spinach bureg or borek! Thatโ€™s what I grew up calling it! Although Iโ€™m sure it has many names. Phyllo dough layers topped with butter, stuffed with a spinach and feta cheese middle! Everyone whoโ€™s ever tried this knows just how good it really is! This dish brings back so many memories, and using this recipe, you have to make it at home yourself.

1 package phyllo dough
1 stick butter melted
2 packages ( 10oz frozen chopped spinach) (about 3 cups) Thawed
2 wheels feta crumbles (about 2 cups)
1/2 tsp baking powder
1 egg
1 Tb sesame seeds (optional**)

Drain the spinach and press out as much water as possible. Combine spinach, cheese, and baking powder in a bowl. Preheat the oven to 350.
Divide the phyllo dough sheets in half. On a buttered sheet tray, lay down a sheet of phyllo, then wrinkle one sheet on half of it and the other sheet on the other half. Drizzle with melted butter and repeat. Once you finish half the dough, spread the spinach mixture safely all over. DO NOT PRESS DOWN HARD. Repeat the process with the remaining dough. Brush with egg wash and pre-cut all of your squares. Top with sesame seeds and cook in the oven for 45 minutes to 1 hour or until the top is golden and crispy.

Spinach but egg. Listen to the crunch. Filo dough stuffed with spinach and cheese. Completely nostalgic and it’s not that hard to make. I grew up calling it but Egg. What do you call it? Leave it in the comments below. For the filling, grab frozen spinach and squeeze out all the water. You could cook it yourself if you want. This is just easier. Then crumble a couple wheels of feta cheese, some baking powder, which is my mom’s secret, and mix it up. Grab your fileo dough and divide it in half. It doesn’t have to be exact. Now for the fun part. Butter up a sheet tray. Lay down felo dough. Then do a crumpled piece and another crumbled piece. Then sprinkle on some butter. Then just repeat. Once you get halfway through, you want to layer on your filling and make sure it’s a nice even layer, but don’t press it down too much. Then do the same thing with the remaining filo dough. Here you can trim off the edge if you want or just tuck it in or just leave it. Now brush it with egg. You want to get a nice coat. And then you want to precut it all the way down. Once it’s cut, you can hit it with some sesame seeds or not. Then into a 375 oven. And after about 45 minutes, when it’s golden brown on top, you got to let it rest. Once it’s nice and rested, you want to cut it through again so the pieces come free. And there you go. Delicious spinach boot egg made at home. Save this recipe. Do it yourself.
