



My wife and I have been doing fun sandwiches for dinner every few weeks, for about a year or so now. She usually comes up with the ideas for what to make and does them. They’re always awesome. But I had some down time this week and wanted to do a project.
I present our hot braised beef and cheese. We were wanting to do something like a cheesesteak, but I had some oxtails and really nice beef broth. I’ve never made a proper cheesesteak, but this is a spin on it.
So we did 5 hours of braising SRF beef oxtails on the big green egg. Once tender I pulled the meat and soaked it in the braising jus. I caramelized diced sweet onions, and green peppers (deglazed with the jus). We then did a homemade (béchamel) cheddar cheese sauce. I made a thickened gravy (with a roux) with some of the jus.
To finish, we toasted these beautiful rolls from the deli. We did a crisp up on the pulled beef in a sauté pan, then mixed the caramelized onions and peppers with the beef. Once crisp (and no more mixing of the beef), we spooned a bit of the gravy over the beef, and added slices of boar’s head American cheese and provolone to melt. Spatula on to the buns and top with the cheddar cheese béchamel.
It was awesome!!! 10/10 will do again!
