Been checking out the pickled carrots and peppers recipe in the new Rick Martinez book and I know I have to make it soon. Haven’t run into a mediocre recipe yet

Escabeche is basically just a quick pickle, super easy to make. I usually double or triple up on the carrots because they’re the best part.
