Next, add ricotta and 2/3 of a beaten egg. Mix well. Sprinkle in some fine flour and mix with a touch of fragrant thyme leaves. Let the dough rest for 5 minutes. Then lightly flour a surface and roll the dough into long ropes. Shape the nochi. You can roll them or press with your thumb. Here Ramsay goes for the thumb press. Now for the cooking part.
