    This is an extremely low hydration dough. Try bumping the water up to like 325g. I would probably also cut the oil altogether and bump the salt up a bit, but that’s just me.

    This is a great beginner’s recipe that I always recommend to new bakers. It is lower hydration but I get a much more open crumb from it. You can’t really over knead it. How new is your starter? Mine took about 6 weeks to be super active. Shaping also makes a difference and that takes practice. It’s a great first loaf though!
