My attempt at Barbacoa beef, which I realllyyy liked. One of my more favorite meal preps. Definitely NOT authentic and I had to alter quite a few things
– I used beef shank as cuts of beef cheek or chuck roast isn’t as available in HK where I live. It’s meat is full of tendons which are great for slow cooking/stews – Sliced up the beef shank into chunks and salted. Then were seared for a 6-8mins for some browning and removed – Threw in diced onions and minced garlic. Then added in a bit of tomato paste. Returned the beef in and added diced chipotle peppers in adobo sauce with seeds removed, lime juice, chicken stock, cumin, oregano, cajun seasoning, sugar, and… a dash of soy sauce. Added a bit more water so the beef was covered. Brought it to a boil then put it on low to slow cooking. Mixed every 30mins ish to avoid the bottom being overcooked. Cooked on low for around 3 hours – Removed the beef chunks and shredded with two forks. Added in the sauce from the pot til I got a juicer consistency that I prefer. Added in parsley flakes at the end for garnish – veggies were just boiled asparagus and cooked peppers/onions with Cajun seasoning, salt, sugar, and minced garlic

I never thought about using asparagus with barbacoa, but it’s a great idea! I usually want something green with this type of meal and most websites say to just make a salad, which doesn’t save the best depending on the type.
