If you’re worried about ash you can buy a stainless steel bucket and put it under there and launch the pan instead.
You need a charcoal chimney, some fire starters (or cotton balls soaked in 90% iso) and a wireless thermometer especially if you’re smoking.
Don’t worry about any other accessories like the vortex or SnS. Learn to use it as is first, then you can experiment with what you want.
Research the snake method for low and slow. You can also just two zones and lump the charcoal on one side. Chuds BBQ and Aaron Palmer on YouTube have a great series about these I highly recommend them.
Hot and fast I usually just light 3/4 or a full chimney depending, once it’s good to go dump it on one half and let it rip 🔥🔥
Careful, you may never use your gasser again!
For low and slow a pork butt is a great option to start with also 👍🏻
