Sheet Pan dinners are my favorite!!! Sheet pan green goddess shrimp ⬇️ Ingredients: Makes 4 servings! * 1 can of chickpeas, drained * 1 pint of cherry tomatoes * ¼ of a red onion, thinly sliced * 1 red bell pepper, chopped * 3 cups of cubed yellow potatoes * 1lb of shrimp * 1 tbsp evoo * Juice of 1 lemon, divided Dressing: * 1/2 cup plain greek yogurt * Juice of lemon + zest * 1 tsp dijon * 1-2 tsp honey * 1/4 cup fresh parsley * 1/4 cup fresh chives * 2 tbsp fresh dill * 2-3 cloves minced garlic * Salt and pepper to taste Seasonings I used-garlic powder and smoked paprika! Method: 1. Preheat oven to 425°F and line a large baking sheet with parchment paper. 2. Prepare all of the veggies. (Make sure you potatoes are chopped into smaller chunks! Add the chickpeas, tomatoes, onion, and potatoes to the tray then toss with juice of ½ of the lemon, olive oil, and a little of the following: black pepper, paprika, salt and garlic powder. 3. Transfer to oven and roast for 25 minutes. While that is baking season your shrimp with the same seasonings. 4. Gently toss everything after 25 mins, add in your seasoned shrimp then roast for another 12 minutes, until potatoes are tender. 5. While tray bake is in the oven, prepare the green goddess sauce by adding the greek yogurt, dijon, honey, fresh herbs, lemon zest and juice to a blender and blending until smooth. Season to taste! 6. Plate you sheet pan dinner and top with feta and the green goddess sauce!
