Hello friends. Today I’m in Bali and we are in kind of a hilltop town and we’re doing a village visit and an outdoor cooking lesson. So, we’re going to learn how to make a few different Balines dishes. Indonesia has many islands, almost 18,000 islands and each of them has a completely different culture. So, we were in Java here in Bali. Uh it’s different because it’s not Muslim, it’s Hindu. Uh so, you’ll see that from every little aspect of this island. It’s a beautiful island and it’s so lush. It’s just incredible. So come with me for a little village walk to learn a little bit about village life and then cook with us here in Bali. Let’s go. Oh, how to say let’s go in Balanese color [Music] and many motorcycles. So now I explain one by one. That’s banana front will become. So here’s our intrepid cooking team here. Look at that. We’ve got people chopping, mashing, cooking. So we’re making a multi-course Balines feast today. Gradian gradient can spices for the soup. See, we have this. This a salad. Salad. Yeah. This a garlic. Garlic and turmeric. This is turmeric. Turmeric. Yeah. This a ginger. Ginger. Aromatic ginger. Ginger. And then this galanga. Galanga. Steam. We steam the stina 30 20 minutes. And this one mixing together. Is that lemon gas? We’re not sure. We’re not We’re not sure what it is. It was on the on the menu like the very first thing like young I see. All right. I love that you’re doing this giant kimole. You like her with the head on. I’d prefer it though. All right, we got the cooking started. We got the rice steaming over there. We got the long beans, the bean sprouts, the carrots, beans for bean soup. That’s the dessert right there. That’s going to be banana first. Shredded coconut. Go for the spices of banana. All right. Soup now. And then this shrimp paste. Shrimp paste. Yeah. And then coconut oil. Coconut oil. A little bit more. Yeah. Okay. What’s in there so far for sambal? So, we have salad, salt, pepper, pepper, shrimp paste, shrimp, shrimp. What is it called? Shrimp paste. Shrimp paste. Yeah. Coconut oil. Coconut oil. And then this coffee and lime. Lime. Yeah. And there’s lemongrass. Lemongrass. Salad. And chili. Chili. Okay. Crush it. Okay. Yes. Hand crushed some ball. I’m not so good at piercing with this. Piercing is a challenge for me. Raise your with coconut chilies. Fried shallots and fried garlic for the salad. Chili pepper. Salt. Salt. paste. Shrimp paste. Yeah, paste. Shrimp and coconut. I just want to make sure. And then we’ve got carrot, bean sprouts, uh, long beans, and what kind of green is that? This a carrot. Oh, the greens. And then this spinach. Peanut green. Spinach. Yes. A spinach. Spinach. And then this. Just wow. So he’s skewering it and then they’re rubbing it in. Fish on a stick. Fish on a stick. Fish on a stick. Yeah. All right. Have some fish on a stick. Is it good? Amazing. That’s why I like our wonderful chef who’s just quietly doing making all the magic happen. Beautiful. That’s one. Check up your menu. Later on, we’ll give you uh certificate for cooking. Wonderful. Yeah.
