The easy peasy way 🙂
Shrimp Saganaki:
Serves 2,3
Gluten free
Ingredients:
3 big tomatoes or one can chopped Italian tomatoes
1onion diced
large drizzle of olive oil
2 cloves finely chopped garlic
pinch of chilli flakes
50 ml white wine
25 ml ouzo
500 gr fresh cleaned shrimps or 300 gr frozen defrosted shrimps
50 gr crumbled feta
salt and pepper
parsley leaf for garnish.
Method:
1. Boil water in a pot, remove stem from the tomato and on the other side make a cross with a knife.
Place the tomatoes in the boiling water and cover. Boil for one minute or until the skins start to peel off.
Remove and place in a colander to cool. Peel off the skins and roughly chop the tomatoes.
2. In a large hot frying pan, drizzle olive oil and start to fry the garlic.
When the garlic starts to color, add the onion and the chilli flakes.
When they have started to soften, add the wine and the ouzo.
Cook down until the wine and ouzo have become a syrup.
3. Now add the chopped tomatoes, stir well and cook for around ten minutes or until you have a juicy tomato sauce.
4. Season the sauce with salt and pepper. Gently add the shrimps, drizzle with olive oil and cover the pan. Cook gently for one minute, remove the cover and turn round the shrimps one by one.
5. Sprinkle the crumbled feta over the sauce. Continue to cook for around thirty seconds or until the feta starts to melt into the sauce.
6. Place the Shrimp Saganaki into a serving dish and garnish with parsley leafs.
Serve with crusty bread or rice and a glass of crisp white wine.
