Ingredients
For the Lamb:
• 1 rack of lamb (8 ribs, frenched)
• 2 tablespoons Dijon mustard
• 1 cup breadcrumbs
• 2 tablespoons fresh rosemary, chopped
• 2 tablespoons fresh thyme, chopped
• 2 tablespoons olive oil
• Salt and pepper
For the Mint Pesto:
• 1 cup fresh mint leaves
• ½ cup fresh parsley
• ¼ cup toasted pine nuts
• ½ cup Parmesan cheese, grated
• ½ cup olive oil
• 1 clove garlic
• Salt and pepper
For the Roasted Vegetables:
• 2 carrots, peeled and sliced
• 1 zucchini, sliced
• 1 red bell pepper, cut into strips
• 2 tablespoons olive oil
• Salt and pepper
Instructions
1. Prepare the Lamb: Preheat oven to 400°F (200°C). Season the lamb with salt and pepper. Brush with Dijon mustard.
2. Mix breadcrumbs, rosemary, thyme, and olive oil. Press onto the lamb. Sear lamb in a hot skillet for 2 minutes per side. Roast for 15–20 minutes until medium-rare (internal temperature: 125°F). Rest for 10 minutes.
3. Make the Pesto: Blend all ingredients until smooth. Add more olive oil if needed for consistency.
4. Roast Vegetables: Toss vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes.
5. Slice the lamb and serve with mint pesto and roasted vegetables.
