Meal prepped breakfast sandwiches for sister in law and her children

    Few weeks ago, I met my boyfriend’s sister and I let them go through my freezer to pick out some breakfast items (burritos, sandwiches, waffles, muffins, etc.) to bring back to their hotel. She made a comment that she wish she could meal prep but with finances, busy schedule, and new baby she couldn’t. Decided to surprise them with a handful of sandwiches to take back home with them.

    Sandwich fillings – Either sausage patties or black forest ham, sharp cheddar slices, american cheese slices, and fried egg.

    My breakfast sausage recipe is ground pork, sage, thyme, garlic powder, s+p, red pepper flakes, maple syrup, and msg. Form into 3oz-4oz size balls. Flattened in between two square sheets of parchment. Place in fridge 1 hour-overnight to firm up before searing on a hot cast iron.

    Sandwiches are wrapped in foil and placed in freezer. I usually like to do parchment for microwave reheat purposes. But the folding of the parchment really cramps my fingers up badly.
