I love it. And I've been eating it a lot, even as a base for simple watermelon-and-rocket salads. What do y'all think?

Depends on how you feel about eating whole grains. Cous cous is not a whole grain (at least that one, I think they do make cous cous from whole wheat flour, too).

I just had some tonight! I roasted some vegetables, mushrooms and artichoke hearts with some Zatar and then added all of this to the couscous and chickpeas with some balsamic vinegar. It was really good.

I use whole wheat Israel couscous for pasta salads in the summer.

Not a whole food, but it’s tasty! Tiny pasta basically! I like using it for grain salads!

Love a couscous bowl with grilled veggies and tahini dressing.
Or a Moroccan couscous with tfaya. My goodness. Caramelized onion and raisins are heaven.
