Ingredients
Romesco Sauce
* 1 large red capsicum
* 1 red chilli
* 65g blanched almonds
* 1 tsp ground coriander
* 1 tsp ground cumin
* 1 tsp sesame seeds
* 1 tsp sumac
* 1 lemon, zest and juice
* 1 garlic clove, peeled
* 150ml olive oil
* 1-2 tsp sherry vinegar
Zataar
* 1 tbsp white sesame seeds
* 1 tbsp black sesame seeds
* 1 tsp cumin seeds
* ½ tsp salt flakes
* 2 tsp sumac
* 10 thyme stems, leaves picked
Salt and Pepper Squid
* 2 medium squid or calamari
* 1 egg white
* 1 tbsp prepared za’atar
* ¼ tsp salt
Yoghurt Dressing
* 1 cup Greek yoghurt
* 1 lemon, zested
Fennel Salad
* 75g fennel
* ¼ cup chopped parsley
* 2 tbsp olive oil
* ½ lemon, juiced

* salt and pepper, to taste
