    Recipe: credits to u/JambonAlpha (followed 90% of the recipe but i used heavy cream instead of egg whites)

    -For the cream, you’ll need 400 g of mascarpone, 6 eggs and 120g of sugar Start by separating the eggs and whip the yolks with 100 g of sugar over a double boiler until you reach about 70 °C. The yolks should be creamy and have at least doubled in volume at this point. Gently mix the mascarpone with the yolks. Then, whip the whites until soft peaks are formed. Add the remaining sugar and whip until you have stiff peaks. Fold the whites into the yolk/mascarpone mix. Adjust sweetness if needed.
    -For the coffee dip, like to use equal parts sugar and espresso (by weight). 1 first make a dry caramel with the sugar and then pour my coffee over it and dissolve it. Then, you can add (or not) any liquor you like to your taste. Tradition calls for marsala but I usually use whatever I have at home like brandy.
    -Then, for the cake part, you can use ladyfingers or Joconde cake, which is a different a type of sponge. Dip your ladyfingers into the coffee mixture for a few seconds until it is absorbed all the way through (or brush it over the Joconde if that’s what you’re going for). Don’t dip for too long as they could fall apart.
    -Assemble by pouring half your cream over the base layer of ladyfingers. Then, place your second layer of ladyfingers and pour the rest of your cream. Lightly dust with cocoa powder and finely grate dark chocolate over it.
