

This vegetable casserole’s silky smoothness comes from the generous amount of EVOO in it. The make cooking a little faster, you first microwave sliced Yukons with some water to begin softening them. While that’s happening, slice a pound zucchinis, a red onion, and handful of garlic cloves, and chop tomatoes. Those veggies are mixed it into drained potatoes and folded in with salt, pepper, oregano, and lots of olive oil. All of that is placed into an 9 by 13 dish and then topped with sliced tomatoes, topped with more oregano, salt, pepper, and olive oil. That’s baked for thirty minutes at 475. And then broiled for an additional ten minutes. Feta and basil finish this excellent dish.
