    **Ingredients**

    * 300g peeled and deveined shrimp
    * 3–4 tbsp potato starch
    * 2 tbsp ketchup
    * 1 tbsp soy sauce
    * 1 tbsp sugar
    * 1 tbsp vinegar (white or apple cider)
    * 1 tbsp gochugaru (Korean red pepper flakes)
    * 2 tbsp water

    **How to Make It**

    1. **Prep the Shrimp** – Pat dry with paper towels, then coat evenly with potato starch (season if you like). Let them rest a few minutes so the starch sticks better.
    2. **Fry the Shrimp** – In hot oil, fry shrimp for 2–3 min per side until golden and crispy. Drain on a rack or paper towel. For ultra-crispy shrimp, let them cool and double-fry for 30 seconds.
    3. **Make the Sauce** – In a bowl, mix: 2 tbsp ketchup 1 tbsp soy sauce 1 tbsp sugar 1 tbsp vinegar 1 tbsp gochugaru 2 tbsp water Adjust spice level to taste!
    4. **Toss and Cook** – Add fried shrimp back to the pan. Pour in the sauce and toss until evenly coated and glossy, about 1 min.
