
This dinner almost didn’t happen… when I went to start cooking, we realized we had no water! (Perks of living with a well and not municipal water…) Luckily, we got the pumps reset and water flowing again. And honestly? This turned into the perfect comfort meal after that little crisis.
I had some homemade sun-dried tomato pesto in the freezer from last fall, so I sautéed mushrooms, tossed in cooked rigatoni, added the pesto and a splash of pasta water, and gave it all a good stir. On the side: blistered cherry tomatoes (the ones on their last leg!) cooked in a cast iron skillet with olive oil, then garlic added at the end.
I spooned those juicy tomatoes over the pasta and served it with maroulosalata: romaine, green onions, dill, mint, lemon juice, olive oil, and a crumble of feta.
We had a glass of Italian Nero d’Avola with it, and after the water drama, it felt extra blissful!

Second, while, at the age of 45, I am now very much a city person, I grew up in the country with a well (and septic system)! I 100% understand the blessings and curses of that, and I love that you didn’t let the water obstacle impede the dinner plan!
Country living is so peaceful but also takes a lot of time, money, and energy that “city people” don’t understand! Major props to you!
