Glass noodles and vegetables in a Thai peanut sauce

This is my first time cooking glass noodles. I think they’re a little undercooked. Any suggestions on how to make them better?

I also think that I used too much peanut sauce on it. I made the sauce myself and made a LOT, and I was excited to use it
