I saw @Jake Cohen make this Baked Goat Cheese Pasta back in 2021, and I’ve been making it ever since! 🍅Here’s my version:
8oz goat cheese
24oz cherry tomatoes
8 cloves smashed garlic
1/2 cup dry white wine
2 T balsamic vinegar
1.5 T honey
1T salt
1t black pepper
1t red pepper (optional)

Thyme sprigs
1lb cooked pasta of choice
1. Preheat oven to 350F
2. In a baking dish, place your goat cheese in the center. Pour in your tomatoes and throw in your garlic. Add in your wine, balsamic, 1T honey, salt, black pepper, red pepper, and a heavy drizzle of olive oil. Stir to combine as best you can (it’ll all come together in the oven). Drizzle the remaining honey over the goat cheese and throw in a couple thyme springs. Bake for 45min.
3. Remove from the oven and *carefully* break up your tomatoes (the juice will squirt) and stir everything together. If you want blend the sauce do that now. Pour over your cooked pasta, stir to combine, and serve immediately. Enjoy! #shorts #short #Your Bite

The sauce is broken.
You need a thickener. Use a little of the pasta water and reduce it first so the starch emulsifies the fats back into the sauce. Cook the pasta a hair less as well.
