I meal prep for just me so I have a lot of half open boxes of pasta in my pantry. This week I sub consciously did three different pasta dishes šŸ˜‚ I didn’t even realize it until I was setting up the picture. I tend to prep 1-2 days before my day off that way I’m just cooking and transferring everything into my meal containers.

This weeks lunch/dinners (from left to right)

Greek chicken pasta salad with Bibb lettuce on the side

  1. Rotisserie chicken (I get lemon pepper)
  2. whatever pasta
  3. Cucumber
  4. Roma tomato
  5. Kalamata olives
  6. Pickled banana peppers
  7. Feta cheese
  8. Onion
  9. Garlic
  10. EVOO
  11. Red wine vinegar
  12. Lemon juice
  13. Oregano
  14. Salt n pepper

Rosatella spaghetti

  1. Jar of Rosatella sauce (I get the one from Trader Joe’s, I’ve used packets for it that I have found at other grocery stores)
  2. Spaghetti (save some pasta water when it’s done)
  3. Ground meat
  4. Garlic
  5. Onion
  6. Italian seasonings spice mix
  7. Red pepper flakes
  8. Salt n pepper
    ~top with Parmesan once heated~

Lemon garlic broccoli pasta

  1. Whatever pasta (save some pasta water)
  2. Broccoli
  3. Ground meat
  4. Lemon juice
  5. Garlic
  6. Red pepper flakes
  7. Salt n pepper
    ~top with Parmesan once heated~
