When you mention the word mujadara, obviously, the primary ingredient that pops to mind would be lentils because mujadara is associated with lentils, but surprisingly , our mujadara here uses pinto beans or any red bean variety, the combination of red beans and bulgur makes this a satisfying dish on its own as they add a wonderful texture and earthy, nutty taste and a healthfully satisfying presence on the plate. The bulgur and caramelized onions make it reminiscent in a way of the mujadara hamra, they both will fill you up without weighing you down, and they can usually be served cold, hot or in between. It’s light and refreshing but filling, too.

3 cups dried red pinto beans
8 large onions
2 cups coarse bulgur#3
10 cups water to cook the beans
1 cup olive oil
2 tablespoons salt or to taste

hello lovelies hadia from hadia’s lebanese cuisine here mad with red beans when you mention the word mjad obviously the primary ingredient that pops to mind would be lentils because mad is associated with lentils but surprisingly our mad here uses pinto beans of any red bean variety it looks a bit like mad hamra it’s healthy frugal and so satisfying rinse the red beans under running water and drain place in a large bowl and cover with water at least 3 in over the top of the beans leave them on a counter to soak for at least 8 hours or overnight drain and place the beans in a pot and add 10 cups of water and cook on high heat spoon the scum that appears on top and once it’s brought to a boil reduce heat to low cover up and simmer for 1 and 1/2 hours or until the beans are fully cooked and now finely chop the red onions i prefer to use red onions because they caramelize beautifully once the once the beans are fully cooked drain and retain the breath it’s time now to caramelize our onions heat olive oil in a large skillet and add the onions and the heat should be medium to low to prevent to prevent the onions from burning before they caramelize now here you have to be patient at the beginning the onions start to turn translucent keep on stirring and scraping up the bottom to the pan until the onions reach the desired brown hoo it should be deeply dark brown and maybe a stage before burning this is an essential step for perfecting the dish and the process takes about 25 to 30 minutes now add four cups of the bean broth to the caramelized onions once it’s brought to a boil add the red beans the coarse burgle salt mix well and infuse everything together cover the pot reduce heat to very low and simmer for 25 minutes or until the burgl is fully cooked i like to serve this bean mujad with our middle eastern salads i’ll provide you to the link to the printable recipe of the bean mujar dada and of the middle eastern salad in the description box just a small trick here that takes the salad to another level of flavor grind together the mint leaves and garlic with a mortar and pestle add lemon juice olive oil and pomegranate molasses they bind together to create a delicious dressing and now cut the veggies here we’re cutting [Music] cucumbers a roman [Music] lettuce green red bell pepper onion tomatoes you can play around and put your favorite veggies mix everything together add the dressing and by the way you can you can serve it with tons of dishes and now our bead mujad is ready the aroma is so overwhelmingly inviting you can serve it too with plain yogurt you can serve it with fetouch or your favorite green salad but it especially good with this middle eastern mixed salads if you’re following with us this must have reminded you of serve it hot cold or in between it’s light and refreshing and filling too add some black olives and enjoy this vegan feast i hope you enjoyed this episode give me a thumbs up and follow if you do i would really appreciate your support and now let’s taste the fruits of our labor really so satisfying so so satisfying and so good for you i provide you with a link to the printable recipe in the description box thank you so much for watching and see you in a coming episode
